Saltinu frá Lima er safnað á Olhão svæðinu við portúgölsku ströndina, í náttúrufriðlandinu „Ria Formosa“; Uppskeran er unnin handvirkt, á hefðbundinn hátt, þannig að aðeins sjór, sól, vindur og mannleg viðleitni er notuð í framleiðsluferlinu.
Saltið er ekki viðbætt og inniheldur engin hvítefni eða rakavörn (t.d.: ferrósýaníð, tríkalsíumfosfat, súralkalk kísil). Það inniheldur mikið næringargildi vegna þess hvað það er lítið unnið. Með þeim hætti er örveruefnin úr sjónum varðveitt sem best (t.d. kalsíum, magnesíum og joði).
